Whether it be this Millionaire's cheesecake or another cake recipe, it always helps to have some guidance on decorating. Millionaire's cheesecake no bake I’ve no professional training as a cook or baker, but I am self-taught and approach my culinary quests with gusto and relish so you can feel confident I’ve tried things out for myself (a lot!) before they reach the blog! Millionaire’s Shortbread lasts surprisingly long. At a minimum, I would say 5 days, but I have stored them for up to 10 days. Honestly, they have a tendency to ‘evaporate’ as the days go by so you won’t have to worry about this. Gemma’s Pro Tips for Millionaire’s Shortbread Classic shortbread is typically made with flour, butter, and sugar in a 3:2:1 ratio. Shortbread is called such because the ratio of butter that is cut into the flour “shortens” the gluten strands resulting in a moist yet crumbly cookie. I love no bake recipes like this Millionaire's cheesecake. In fact, I've made many no bake recipes before, like this incredible no bake biscuit cake. The best thing about no bake recipes is that you don't have to wait for the cheesecake to cool off. However, that being said, once you assemble all the layers, you have to give the cheesecake a bit of time to set.

I used my Lakeland Mini Bites Dessert tinto make 24 little millionaires and I really love their look – especially if you have a Mini Bites Presstoo so you can flatten the shortbread layer down well and easily. I hasten to add, Lakeland hasn’t asked me to write this post, I bought the tin and press myself and love it so much, I wanted to share one of the ways I use itwith my readers. Chill in the fridge until set. Remove from the tin and cut into squares, dip your knife in hot water between cuts to help cutting through the chocolate.

Once you take it out of the fridge, give it another 5 minutes to take on a normal temperature. Trust me, the perfect slice is worth the wait. The caramel layer is made with condensed milk and a little golden syrup and once cooled, it sets like a dream every time – it’s never failed me yet ( my Butterscotch Sauceis a caramel which doesn’t set hard no matter how long it chills but the condensed milk is like a cheat’s version of fudge, so it sets once cool). A molten puddle of dark chocolate atop that toffee-like caramel and sweet, crumbly shortbread balances out all that buttery sweetness. The caramel may droop down the outside of the cheesecake a little as you remove it, don't worry, I think this adds to the overall look, and it should still be set on the inside.

In short, the Millionaire's cheesecake derives its name from the fact that it contains a Millionaire's shortbread base. This base is indeed rich, and it's also known as a caramel shortcake. It's basically a base which includes tons of caramel. It's crunchy, chewy and soft at the same time. Now imagine that this is only the base of the cheesecake. This is a great make-ahead dessert. In fact, I'd always urge you to make any cheesecake at least the day before you're going to serve it. They really do need several hours to set in the fridge otherwise you'll end up with a soupy mess. And no one wants that, do they? Step Nine: Chop the chocolate into small pieces and put them into a heatproof bowl. Pour the double cream into a small saucepan and place it over a medium heat. Remove from the heat just before it reaches boiling point. Pour the hot cream over the chopped chocolate and leave it to sit for a few minutes. Heat the reserved caramel from earlier in the microwave for 20 seconds, then drizzle over each slice of Millionaire's cheesecake before serving for an extra touch. For fans of Twix bars—shortbread bars layered up with caramel and coated in chocolate—this millionaire shortbread was made for you! This chocolate dessert can be sliced up into any size you prefer, making it the perfect bake sale treat, homemade holiday food gift, or unique addition to a Christmas cookie plate.

Congratulations, you made it!

Let the chocolate sauce cool down a bit before pouring it evenly over the cheesecake filling layer. http://www.everynookandcranny.net/mini-baked-cheesecakes/ http://www.everynookandcranny.net/gluten-free-mini-dundee-cakes/ http://www.everynookandcranny.net/little-easter-cakes/ Hence, indulge in its goodness and don't be afraid to take more than one slice. I guarantee you that before you reach for seconds, there won't be a piece of the Millionaire's cheesecake left. It’s really important to use room temperature butter to make the shortbread as it needs to be creamed really well You can make this recipe using a handheld electric whisk, a stand mixer with the paddle attachment fitted or with a good old fashioned wooden spoon!

raspberry and lime cheesecake - this cheesecake is a much lighter alternative than the Millionaire's cheesecake

From the book: How Baking Works

When making the caramel it's really important to stir it continuously otherwise it will burn and/or crystallise. If you fancy getting creative in the kitchen, why not try making your own SW friendly shortcake recipes which don't cost you too many syns?
