Thanks for the reply, these are the knives I have.. http://www.amefa.co.uk/richardson_sheffield_products.html#MidoriProduct Russums provide clothing, knives, equipment and books to the catering and hospitality industry. All our products are intended for use in a commercial environment and are of a quality level demanded by professionals and serious cooks. A very efficient ceramic roller knife sharpener from Japan. It includes medium and coarse rollers and a water bath system. The design, which is based on the Japanese bullet train, includes a very comfortable handle. It is important to note that there are three models of this knife sharpener. The SH220 Minosharp is only suitable for Global knives. The sharpener is sturdy, and has very good quality big ceramic stones. The ceramic stones are made in Japan, and the plastic is made in China. I would definitely trust the made in Japan quality, because they never fail me.

MinoSharp SH550/BR - PLUS 3 Sharpener Black-Red (SH-550/BR)

The MinoSharp SH550/BR water sharpener is manufactured in Japan from high quality materials, including the three ceramic wheels contained within. The wheels offer three levels of coarseness, allowing you to get the perfect level of sharpness for your knives. Although it’s designed for use with Global Knives, it will work perfectly with most brands. Retains Its Simplicity And Ease Of Use – The Minosharp Plus is uncomplicated, and actually very easy to use. This should be the most obvious and least surprising of the pros in this review. One look at the product pictures and you’d already have an idea of how this thing is supposed to work! The wheels are color coded as white to be the coarse grit and pink to be the medium grit. Some people are not sure how much water to add to the compartment and the answer to this, is you add enough water such that when you spin the sharpening wheels, they are evenly lubricated with water. Rule of thumb: It’s always best to add less water than more! These guide rails are designed to help maintain the correct angle for sharpening knives when sharpening with a whetstone. The angle is between 10 and 15 degrees. Perhaps it will sharpen a dull blade to something useable but it does not provide the edge it promises. Will look to professional knife sharpening services instead. The guide rails are sold as a set which includes a small and large guide rail. The small guide rail is suitable for knives with blade lengths less than 6". The large guide rail is suitable for knives larger than 6". The guide rails are lined with plastic to minimize scratching on the knives during their use. Any time you remove one of the guide rails from your knife, rinse and clean it thoroughly to remove any residue from the stone that may remain inside the guide rail. To further insure that no residue remains, it is recommended that you pull a clean towel through the guide rail after rinsing. If you fail to remove all the residue from the guide rail, the residue may scratch the knife the next time the guide rail is used.It washes away steel residue– Water cleans both the blade as well as the ceramic abrasive of any steel residue that results from sharpening. Cleaning the abrasive in particular ensures it remains clean at all times, and is not loaded with steel. If you are not inclined to use a sharpening steel or whetstone - the minosharp knife sharpener will produce excellent results with very little effort. With the hope of sharpening a set of knives, this sharpener did not perform as suggested. Careful following of the instructions did not yield a sharp edge, even after repeated attempts.

MinoSharp SH-550/BR MinoSharp MINOSHARP PLUS 3 Sharpener

Should not be used for Global knives with chamferred blades, which are sharpened on one side only. These knives should always be sharpened on a whetstone. A Flexible, All-Round Sharpener – One of the pros I had for the previously reviewed 3-stage Minosharp, was how incredibly versatile it was for a pull through system. The Minosharp Plus retains the same advantage. I’ve reviewed a ton of pull through style sharpeners, and ALL of them fall short to this regard. They all have a single stage, (and therefore a single abrasive/grit) which makes them inept or unable to provide a solution for every sharpening need. For a moment, I want you to consider traditional stones just for the sake of argument at hand. Granted you may be unfamiliar with traditional stones, and even care less to know about them, but the point I wish to make is directly related, so stay with me here! Have you ever seen a chef or professional sharpener use a single stone (with one grit by the way) to achieve that blazing sharp edge? I’ll bet the answer is no. They use different stones with different grits to achieve the desired result. The point I am trying to make here is that a single abrasive/grit is not always sufficient. Having a system that offers more than one stage is great, because it makes it that much more flexible, versatile, and complete. The sharpener really lived up to its expectation, and i'm really loving it! I even used a piece of paper to test the sharpness of it like the demo I saw on youtube. I tried out the Minosharp as soon as it was delivered, and I followed the instructions to use the hard grind for 20 times, then the medium, followed by the fine grind. Because my knife is quite damaged, I had to repeat the process two more times until the chip disappeared.Knives from Japan ltd T/A Global Knives Registered office Silversteel Manor, Carrwood Road, Sheepbridge, Chesterfield, S41 9QB, England, Registered in UK There are 3 different kits, one containing a rough (240 grit) stone, one containing a medium (1000 grit) stone, and one containing a super fine (6000 grit) stone. Each kit contains a stone, a set of guide rails and a plastic holder which doubles as a storage box and a base to elevate the stone above a counter during sharpening. The storage box is ventilated so that the whetstone will dry if it is put into the box while still wet. Minosharp is a brand of Japanese sharpeners owned by the Yoshikin factory who also manufacture Global Knives. Minosharp uses the finest quality of Japanese grit to produce top quality whetstones and pull through sharpeners which are designed to sharpen any brand of knife. The Minosharp Plus 3 has 3 sets of sharpeners - fine, medium and coarse. The ceramic wheels are larger and longer lasting, than the wheels on the original minosharp. Answer: I would not use this to sharpen the following knives: ceramic, serrated and single sided blades (like sushi blades). I would also refrain from using this to work on any tools (scissors and shears).

I'm not sure of the edge angle but I'm guessing from looking around 20*. I'm keen to take them down to 15* though, do you know if the minosharp has a stone capable of a regrind?Three sharpening finishes, coarse, medium and fine, all set at an angle to give face as well as tip sharpening.
