Description

Prunus Avium, a variation of the wild cherry, and Prunus Cesarus, a species of cherry known for its tart and slightly bitter flavor, are combined to create amarena cherries. Sweet cherries are more effective at reducing inflammation than their tart counterparts. They have higher concentrations of anthocyanin phytonutrients, the substance that gives cherry their distinctive red color. Fortunately for the cherry enthusiast, the miniature bomb of flavor that is the main ingredient in the amarena cherry compote is considered a superfruit. The cherries not only offer a marvelous taste, but are free of fat, sodium and cholesterol, and a particularly good source of Vitamin C, potassium, fiber, folate, magnesium and iron. They also contain a higher antioxidant capacity than grapes, oranges, plums, raspberries and strawberries combined.

The first time I tasted this Amarena cherry ice cream was in Rome, sitting on the steps of a tiny gelataria overlooking the Colosseum. The air was hot, the view spectacular and the gelato, unforgettable. Since then, whenever I make this ice cream, I think of Italian summers. This ice cream can take you there. If this classic nutty liqueur is not for your tastes then it’s totally fine to leave out the alcohol entirely. Once it’s ready, I like to slather spoonfuls of this Amaretto Cherry Jam onto mini brioche rolls for a weekend breakfast treat. The subtle flavour of the almond liqueur muddled with the robust flavour of the dark, sweet cherries adds a touch of decadence to the jam and my breakfast. While you can make gelato with almond or coconut milk, the results won’t be the same as they would be with dairy milk. Conclusion A candy thermometer will help tremendously for this recipe. You can still make this recipe without one, but it does make it easier. If, however, you intend to eat the entire batch within 2-3 weeks, it will be fine to store it in sealed containers in the fridge. Do let it come to room temperature before serving to ensure the flavours in this cherry jam really shine. What Can I use Instead of Amaretto?

Place the cream, milk, sugar, vanilla seeds, and honey in a small saucepan. Heat gently until the sugar has dissolved. Remove from the heat and stir in a pinch of salt. According to Wikipedia, "The Amarena cherry(Italian: amarena) is a small sour dark colored Italiancherrygrown inBolognaandModena, two cities ofItaly. It is usually bottled in syrup and used as a decoration on rich chocolate desserts".While stirring continuously, let it simmer for about 5 minutes. Add Amaretto and rest of the ingredients Screaming right along with you, Di! I have never used an ice cream maker, and since i don’t have the patience to churn every hour, I stay away from home made ice cream. But boy, this one has got me thinking again! Add the can of cherries (juice and all) and sugar to a small saucepan. Attach a candy thermometer if you have one and bring the mixture to a boil over med-high heat. Four-hours is a pretty long tour. So about halfway through, our guide took us to her favorite café for a short break.
