Description

Kababs are made with ground meat, cilantro, fresh ginger, and a few spices and formed into a calendar shape. It is cooked slowly in onion and tomato gravy. It is the ultimate treat for all food lovers. Make a patty and keep it on tray side by side with some distance. Place the tray in freezer for 01 hour. The spice powders namely chaat masala and amchur powder can be adjusted as per your taste preferences. Take meat cubes, soaked yellow split peas, ginger, garlic, green chili, Shami kebab spice mix, turmeric, potato, mint leaves, oil, and one cup of water in a pot. Water should be enough to cover the meat entirely. Bring meat to boil then reduce heat and cook for 45 minutes on medium-low heat. Cover the pot tightly. ( You can also pressure cook for 20 minutes.)

In a Pan, toast cumin seeds (zeera) and Coriander seeds (sabut dhania) on low heat until it gets aromatic. To reheat the cooked Bihari kabab, take out and add little oil in a pan and heat it up. Fry the kabab in the pan and as it becomes soft then serve it accordingly. To make the yoghurt whey sauce, bring the yoghurt whey, cream, cashew nuts, cardamom and crushed ginger to a rapid boil in a saucepan. Cook until the cashew nuts are soft enough to mash – this should take around 5 minutes over a high heat. Remove the cardamom pods and transfer the remaining sauce to a blender. Blend for 5 minutes at the highest speed and adjust, if needed, with hot water until the texture is the consistency of double cream. Season with salt and set aside.
