I like this method the best because it’s faster, and helps the onions hold their texture better so they won’t turn to mush when you process the jars. Our large plot of onions yielded quite a few bulbs, but all of them were undersized and not very well-suited for long term cold storage without being processed. The good news is yes, you can. Here are some tips to better store and preserve your onions in different ways. How to Choose the Best Onions

You should use them within a year for optimal freshness, but ideally, you should wait for at least three to five days before consuming to allow the flavors to really set in. Other Recommendations Process the filled jars in a pressure canner at 10 pounds pressure for 40 minutes (pints or quarts). That assuming you have a lot of extra freezer space, but really that’s best used for storing meat or a summer’s worth of frozen berries. Canning provides you a good option without taking up freezer space. Open the can of corned beef and cut into rough cubes. It is soft and crumbly so don't worry too much about neatness! Process pints or quarts in a pressure canner for 40 minutes. At altitudes of 0 to 2,000 feet, process jars at 11 pounds pressure in a dial gauge canner; in a weighted gauge canner, process jars at 10 pounds pressure at altitudes of 0 to 1,000 feet and at 15 pounds pressure for altitudes above 1,000 feet.”

The thing is, onions need to be cured properly before storage so they’ll develop a protective papery husk, and dry out their wet stem that’s liable to mold otherwise. They’re harvested large, so there’s still plenty of onion left after the curing process dried out the outer layers. There are actually a few reasons to can onions, beyond the depredations of an overzealous kindergartener.

We had a ton of onions to pull this year, and although they were small, there were a lot of them. I was hesitant to simply cure and store them since they would take up so much room and offer very little usefulness on their own. Canning instructions: Heat water in canner to 140 degrees F. Process in a water bath canner for 10 minutes (pints) or 15 min (quarts), starting the timer once the water has come to a boil (for high elevations, 15 minutes for pints (20 min quarts) for 1,000 to 6,000 feet, 20 minutes for pints (25 min quarts) at 6,000 feet and up). That’s my interpretation of the National Center for Food Preservation’s guidance, and that’s what I’m now doing in my house. Obviously, I’d recommend you do your own research and make your own decisions when canning at home. If you prefer egg with a runny yolk, you are better off frying your egg in a frying pan or poaching. For something light and sweet, our fluffy pancakes or English crepes make the perfect addition to any brunch. All of these recipes will leave you feeling satisfied and ready to start your day!

Add half a teaspoon of salt to each jar If the size of your jars is “quarts” add 1 teaspoon; for pints, half of a teaspoon is enough. I like apple cider vinegar because it gives the onions a bit more sweetness and zest - plus it makes the brine a pretty color! I buy this kind of apple cider vinegar - it’s much cheaper to buy in bulk than what I can usually find at my local grocery store. The ratio you prefer is entirely based on personal preference, anywhere from 1 part vinegar to 1 part water, all the way up to just vinegar alone.

You should also wipe down your canner to make sure it is nice and clean. Then, you can fill it about halfway full with water and begin heating it on the stovetop. Some popping noises are to be expected regardless, but if the lid moves, you don’t have an effective seal. You should store your onions in the refrigerator or start the canning process all over again. After the onions are translucent in color, remove them from the pot, (but keep the cooking liquid) and place them inside your warm glass jars.
