The original, chocolate chip and gluten-free Hobnob biscuits are what you would call ‘accidentally vegan’. That means that although they are suitable for vegans, they were not intentionally made to be vegan-friendly. Are there any vegan chocolate Hobnobs?

Golden Syrup – This is a really key ingredient for both flavour and texture but I realise it’s not available everywhere in the world. Corn syrup is a good alternative if you can’t get it. Oats – Real hobnobs use a combination of jumbo oats and rolled oats. Either will work great on their own though.

Flour – Self raising flour is best but if you don’t have any, you can use 125g of plain flour and 1.5 tsp of baking powder instead. The drink that Kate likes the most is tea dripped. It’s a sturdy, oat-based base dipped in golden syrup and coated in chocolate. Once dipped in chocolate, the biscuit does not become completely soggy and retains some bite. Because how hobnob biscuits are made has always been a mystery, Kate wanted to try it out. It is a type of chocolate biscuit made from hjorthornssal (a.k.a. Baker’s ammonia (rather than baking powder) is used instead. This method resulted in even lighter, crispier biscuits. Hobnobs is also a brand of British biscuits launched by McVities in 1985. Sometimes I will use 70/80% in my cooking and add a little extra sweetener like honey/agave/maple syrup. Dark chocolate is almost always dairy free unless it’s a cheap brand where they will add crappy fillers.
