If you're using a high-speed blender, I would highly recommend taking a break from blending every few minutes to avoid burning out your motor. I love this almond butter recipe. You have all the control, meaning the amount of salt or extra flavors like vanilla or cinnamon is up to you. You can make creamy almond butter, or if you like a little crunch, you can make crunchy almond butter. If you’ve been patient and still aren’t happy with the texture, consider adding a teaspoon or two of neutral oil to help the nuts along. Grape seed oil, avocado oil or a vegetable oil are all good options. More From Scratch Recipes

When I can find them, I buy unsalted almonds (usually in the bulk aisle of the grocery store). We do call for salt in our almond butter recipe. By starting with unsalted nuts, we have more control and can add a little salt at first and go from there until the almond butter tastes perfect.

How to Store Almond Butter

Almond butter is made from ground, roasted almonds, which are the seeds of the Prunus dulcis tree. The trees grow pink or white flowers and bear fruit. Almonds are the stone-like pits in the centers of the fruits.

Depending on your blender or food processor, it could take 10-20 minutes of blending. Our almond butter doesn't have anything in it but dry roasted almonds. This is a common way to make it, but some recipes call for oil and other ingredients, which we don't test. If a blender has a hard time processing almonds on its own, you may get better results by adding a liquid, like oil, to the mix. Also, we use the main jar and blade assembly for this test. Some blenders come with food processor attachments or additional blades that may produce a different result, but we don't currently test these extra accessories.Unblanched almond flour: For sulfite-free, I use unblanched flour. I’ve had trouble finding organic unblanched or even organic blanched flour, but this has been safe for me.

Almond butter is available in a range of flavours including coconut, pumpkin spice and even cherry Bakewell flavour! Make this recipe faster by buying roasted almonds instead of raw almonds. This allows you to skip straight to step 2, cutting your time in half. Almonds can help control blood sugar and insulin levels after eating. Most homemade nut butters (including almond butter) will last for 3 to 4 weeks. I like to store mine in mason jars. It will last longer when stored in the refrigerator. If there's an appropriate preset mode or a specific speed setting for almond butter in the manual, we follow those instructions for the test. Otherwise, we set the blender to the speed setting closest to or under 24000 revolutions per minute (RPM), which is often the maximum speed setting.

Tips for making Almond Butter

Preparation time is how long it takes for the blender to make the best almond butter it can. We time the test with a stopwatch, and we also film the process in case there's any doubt about when the almond butter finished. We respect any continuous runtime and suggested cooldown times listed in the manual. For an immersion blender, if there are no instructions in the manual, we run it for one minute at a time and allow it to cool down for one minute before blending again. We also clean almond butter from under the blades during the cooldown time; this helps the blending process.
