Place the egg yolks in a medium bowl and whisk to blend. Now slowly pour most of the caramel-cream mixture into the bowl with the eggs, whisking constantly to incorporate and prevent the eggs from curdling. (This process is called tempering, and is what makes your batter into delicious, creamy custard!) I made Martha Stewart’s Turtle Brownies recently and they also included a homemade caramel. Through this experience, I learned to stop cooking the sugar before it gets to the “deep copper color” because it does continue to cook even after it is removed from the stove (the pan is still very hot). When I let it go to the color suggested, it burned and was bitter. So just my two bits, stop sooner (to just turning golden) and it will turn out just like you want it. Burnt caramel is a very sad thing! August 20, 2019 Pour into freezer safe container & drizzle in caramel syrup, add regular caramel, pretzels & sea salt. Use the right pan.The caramel will cook best in a light-colored stainless steel pan so you can see the color, which will keep it from burning. To be fair, I was having kind of an off day in the kitchen, but I have to say these blondies were very disappointing. I think they were some odd combination of bland / not quite sweet enough / and a little bitter. I think milk chocolate would have been preferable and that the caramel recipe is a little too touchy for these nuggets. Also, the pretzels sort of sog into the mixture and make the entire thing taste a little like a pretzel without all the salt on your tongue. I could see if you kept the pretzels on top, added a bit of salt to the top and used milk chocolate and some other caramels, they could be yummy. I may have to try again, just out of stubbornness. If you add anything to the caramel, I would melt them with heavy cream, not water. I’ve seen some recipes were you melt caramels with a little bit of heavy cream.

Add a little sprinkle of sea salt on top and let it set for a few hours at room temperature for 30 minutes or so in the fridge. I melted the caramel in the microwave a little at a time and then just stirred it until it was warm. It was awesome! I do not have a lot of caramel experience but my guess is you are getting it too hot and it’s burning the sugar while it’s still melting. I’d go a little cooler than whatever temp you’re doing, but be patient about the timing. Does anyone have any idea on how long these might keep? Looking to do them for Christmas and trying to get baking done early, I just don’t want the pretzels to go soft, or have problems. Could these handle 2 weeks in sealed Tupperware? Hershey's Special Dark Cocoa is richer than most store-bought cocoas and adds a deeper chocolate flavor. Feel free to use what you have. The brownie batter gets swirled with salted caramel and then sprinkled with crushed pretzels before baking. Homemade salted caramel I am not sure if will work the same — maybe just the fat on top would, but it won’t have the same lightening effect.
