I discovered this Guinness sauce years ago when I was visiting Raglan Road Irish restaurant in Orlando. Hi Sarah – We aren’t experts in canning but know enough about it that, to be safe, you’ll need to understand the acidity and PH levels of the foods you are trying to preserve. I added zest and juice of a clementine which added another flavor, I really wanted a blood orange but the my butcher is closed today. So pour it in a gar or glass container ( 16 ounce mason jars are perfect as this makes 2 cups of glaze) and let it chill, ideally overnight in the refrigerator. Toss the potatoes in the butter, add the chopped fresh rosemary, sliced garlic and season with sea salt and freshly ground black pepper. The spare refrigerator in our basement has become a gathering place for a rather eclectic collection of beer. One of the servers told me how easy it was to make Guinness sauce, and I've been making it ever since.
