The meal was devoured by all, leaving just enough for a top notch leftovers lunch for one (me) the next day. There are few households without one or more of the books in the series, which consists of The Roasting Tin, The Green Roasting Tin, The Quick Roasting Tin, The Roasting Tin Around the World, and now The Sweet Roasting Tin.

i’m just me—flinging ingredients into chipped bowls in my tiny kitchen and hoping it all tastes good. You’ll be left feeling smug , well-fed and sleepy with plenty of time left over to go back to doing absolutely nothing. The butternut and bulgur wheat was tender, aubergine deliciously soft and the halloumi still delightfully squeaky. I should’ve realised really, this busy midweek evening was the perfect road test for Rukmini’s cookbook, and I’m pleased to report it passed with flying colours.When the roasting time is up, remove the tin from the oven and add 100g of roughly chopped spinach, 15g of chopped coriander, the peas if using, 1 tablespoon of extra virgin olive oil and the juice from ½ a lemon (I usually use a whole lemon).

I found the Spicy Chipotle Chicken Wings recipe outrageously straightforward – just two ingredients in a tin covered in an easy chipotle mixture and shoved in the oven. It’s almost laughably easy to prepare, slicing an onion and crushing some pine nuts in a pestle and mortar being the most complicated cooking manoeuvres required – about all I was capable of after a long day in any case. With her signature fidelity to ease and accessibility, Rukmini presents 75 brand-new recipes that can all be made in standard baking tin formats. When she's not styling and writing, Rukmini enjoys planning for an extensive organic kitchen garden from the confines of her London balcony, complete with chickens. I think we've tried five or six things at this point and all of them have been very easy to make and very nice to eat.Everything went into the eponymous tin and into the oven, and I barely had time to pour a glass of wine and ring my mum before the oven timer started beeping 15 minutes later.

Spend a little time prepping some ingredients, chuck them in the oven, go and do something else and dinner’s ready - the oven has taken care of the hard work. Some of the ingredients are a bit more on the expensive side but looking through they should be easier to replace with cheaper options. Veganism is NOT a dietary preference; it is an ethical position that seeks to reduce harm as far as possible to animals. There are some good ideas in here, but also some really weird and off-putting flavour combinations, especially if like me you hate licorice as there's a lot of licorice flavours in this book (fennel, chicory, celeriac etc).Perfect for: Fans of the orginal The Roasting Tin keen to add some new recipes to their repertoire, busy family cooks, vegetarians and vegans looking for some fast and simple midweek meal ideas, students, and anyone who relies on takeaways to get them through the week. Fundamentally, the style of cooking appeals to me and the recipes look genuinely appealing, interesting yet straightforward. Having read through the ‘quick’ recipes too I think they can be pulled together in that time also (which puts a lot of other cookbooks to shame – looking at you ‘Bosh boys’ and your ‘quick and easy’ recipes). She has published several cookbooks including 'The Roasting Tin' Series (The Roasting Tin; The Green Roasting Tin and The Quick Roasting Tin) as well as 'The Middle Eastern Kitchen'.

When the opportunity arrives to try delicious and, at the same time, easy to remember recipes, I can’t help but get excited. The two sections of the book are then split up into the amount of time you need to put them together as either quick (under 30 minutes), medium (approximately 45 minutes) and slow (over an hour). Perhaps most seriously, this is a book labelled vegan and vegetarian and it would be great for anyone wanting to build a less meat based repertoire. e. whilst the kids are having their supper), which can happily sit in the oven whilst I get them into bed.But this and its sister book have done just that and for the better with less food waste, less energy and a wider range of foods getting eaten by Other Half.
