Description

The King Philip II of Spain sent his family doctor Francisco Hernandez on a study trip to these lands to clarify certain mysteries of vanilla. In 1651 the Doctor Hernandez´s work was published in Rome in which vanilla pods were called ARACO AROMATICUS. Besides these three popular types of vanilla, there are also lesser-known varieties such as Indonesian, Ugandan, and Indian vanilla. Indonesian vanilla has a smoky, woody flavor with notes of caramel, while Ugandan vanilla is known for its bold, earthy taste. Indian vanilla, on the other hand, has a subtle, sweet flavor with hints of spice and is often used in traditional Indian desserts. The Unique Flavor Profile of Mexican Vanilla Blend

Vanilla is also an important ingredient in Mexican cuisine, particularly in desserts such as flan and tres leches cake. It is also used in savory dishes, such as mole sauce, to add a subtle sweetness. In addition to its culinary uses, vanilla is also used in traditional Mexican medicine to treat a variety of ailments, including headaches and stomachaches. Vanilla beans grow green on the vine and are harvested when the tip begins to turn yellow. The curing process is what gives the beans their characteristic brown color as well as their flavor and aroma. In Mexico, the curing process involves wrapping beans in blankets and straw mats and then placing them in ovens for 24 to 48 hours. From this point on, the beans are spread in the sun each day to absorb heat and then placed in large wooden boxes overnight to sweat. The production of vanilla in Mexico has faced challenges in recent years, including climate change and competition from synthetic vanilla. However, efforts are being made to preserve and promote the country’s unique varieties of vanilla, such as the vanilla from Papantla, Veracruz, which has a distinct floral and spicy flavor profile. Understanding the Different Types of Vanilla and their Characteristics Mexico remained the sole growing region for vanilla beans for another 300 years. That’s because of the symbiotic relationship between the vanilla orchid and an indigenous tiny bee called the Melipona. This Mexican bee is the only insect evolved to pollinate the vanilla orchid flower. In 1532 the priest Bernardino De Sahagún started making researches onthe therapeutic properties of vanilla and he discovered it was good for digestion. After lost global monopoly on vanilla, Mexico started to decline its production and become the first place on world production even though there was a time in which the economy of the region was based on vanilla.
