Description

The Italian bubbles wine box, sourced from the cellars of the Enoteca Rabezzana restaurant in Barbican, is a real steal for the price; containing Prosecco DOCG Asolo “Ca’ Zen” from Veneto, a Brut Rose’ Ivan Dante Rivetti from Piedmont and, by far the greatest inclusion, a bottle of little-seen (in the UK at least) Ferrari Maximum Brut from Trentino. A genuinely brilliant idea which is as close as you’ll get right now to doing a ‘supermarket sweep’ around some of London’s most interesting wine collections.

Although VS stands for Very Special, this is actually the youngest cognac age statement and other letters signify higher minimum ages. How Does VS Cognac differ to VSOP and XO Cognac? Probably the most common form of cognac available is VS cognac, so let’s break down exactly what this means, how to drink it, how it differs from other letters you might see and crucially, where to head to try some of the good stuff! What is VS Cognac? We don’t discriminate or judge in this column. Well, actually that’s a complete lie. We have a major problem with Bud Light and the pitiful range of white wines that haven’t altered for over half-a-decade in any of the ‘Local’ branches of Sainsbury’s. But we embrace the new. And this creation is right at the forefront of what refusenik Oasis fans would call uncomfortable, new and strange and what Four Tet and Octavian fans would open-mindedly embrace.Hen ness y Parad is , created in 1979 , is named for the Hen ness y Founder ‘s Cell ar where only the finest , rare st , and oldest e aux – de – v ie are kept . Traders in salt and brandies in La Rochelle, on the Charente coastline, since the 17th century, when the waters of the River Charente were said to be "covered in swans", the Seignette family placed the graceful bird at the heart of their coat of arms. Within cognac production, you’re likely to find different letter combinations on the bottle. These letters signify the age statement. In the case of VS cognac, this stands for Very Special and means that the youngest eaux-de-vie in the blend will have been aged for at least two years. You might also see three stars instead which pretty much means the same thing!

Jehan Seignette was born in 1592 in La Rochelle on the French coast, trading in the local salt which was credited with medicinal properties. His descendants developed the business into a world-famous brand, using a swan as their emblem. Over 40 different eaux-de-vie are blended for Hennessey VS which spends 2 years in French oak for a superbly full-bodied cognac carrying notes of dried fruits, subtle spice, and mellow vanilla. In fact, the entire age statement grading system was created by Maurice Hennessey so in a way, this is the definitive VS cognac! The amount of time spent in barrel defines the style of a Cognac. A VS will spend at least two years in oak; VSOP is aged for four years; and XO for 10 years. Above these classifications, the finest blends and vintage Cognacs can be aged for many decades. Vinatic brands its wines as ‘no-nonsense’ which, in common parlance, tends to mean ‘not very good’. They’re doing themselves a disservice, as this small range of wines, labelled ‘Cow’, ‘Leaf’, ‘Fish’, ‘Root’ and ‘Legumes’, are wonderfully palatable, easy-drinking session wines – perfect for a cosy evening where ‘dinner’ involves little more than unwrapping the cheese and charcuterie.
