Although I used some of the usual suspects, this cake also throws Morello glacé cherries, blueberries, apricots, crystallised ginger, Iranian pistachios and flaked almonds into the mix. But even the standard fruit has been carefully selected for plumpness and juiciness… Flame raisins and Turkish sultanas are perfect. Oh… and I left out the peel! Sadly, Christmas cake is very difficult to make low FODMAP. The quantity of dried fruit is simply too high.

Your ‘bog standard’ and old school cakes tend to use currants, sultanas, raisins, cherries and sometimes peel. Occasionally, the tradition is extended to Christmassy cranberries, figs and prunes. But choice of fruit matters… As a child, I avoided Christmas cake like the plague… I later worked out that this was because I hated too many currants and raisins in particular… both of which seemed to be the bulk of the cake. We are baking this treat in both large traybakes and individually wrapped slices and we’ll be adding it to our Honeybuns online Christmas shop which will be going live towards the end of October. Without gluten to bind the cake batter together, you can be left with a very loose and crumbly sponge texture which won’t work for this recipe.

And if a huge percentage of the recipes were already available on my blog for free or previously published in other books, I just couldn’t honestly say that! So yep, almost every single recipe is totally unique to this book, of course, with the other 1% being gluten-free Yorkshire puddings – a must at Christmas! There does seem to be a variety of mince pies this year from regular gluten free to frangipane topped and slices which makes a nice change. It is also nice to see a couple of places have a gluten free yule log too when for the past year or so only Tesco have had this.
