Traditionally, corn tortillas are prepared by nixtamalizing corn, then grinding it into a wet dough (masa). Nowadays, you can use a special type of corn flour called masa harina (azul for blue tortillas). Corn tortillas are an essential ingredient to many staples of Mexican cuisine, so the tortilla can make or break a meal. These Blue Corn Tortillas are a little different to the white ones, and have a slightly different recipe to reflect the absorbancy of the flour: Mix together the masa harina and salt in a bowl before pouring in the water. Knead with hands for 1-2 minutes or until smooth. However, you can store already cooked tortillas for a day, if wrapped well. To reheat them, place them in the microwave between the moist towel, and microwave for about 15 seconds. More Mexican Favorites

Mix masa harina and salt in a medium bowl. Add oil and hot water and stir with a fork . Kneed a for minute or two, right in the bowl until very smooth and form a ball. Cover with a wet kitchen town (or plastic wrap) and let sit 2o minutes (or up to 3 hours). Do a tester, see notes. Roll the dough into a 12-inch log. Slice it in half, then half again, and half again so you have 16 pieces roughly the same size. Roll into balls. Cover with a kitchen towel. Pipián mole verde.
