Be prepared to have this take a while because you’ll need to let the calcium lactate sit for at least 4 hours before you can make the popping boba spheres. Popping boba is traditionally made from three main ingredients: fruit juice, sodium alginate, and calcium lactate.

Steep the tea bags according to the type of leaves and strength desired. Generally, if you steep them longer, you will have a stronger flavour. The benefits of making tapioca pearls yourself are that you know exactly what ingredients are inside it. Also, you will be able to customise it entirely by making unique flavours like mango boba or matcha pearls.

Next, in a small pot, boil 2/3 cup of water and pour hot water into a mug. Add in your green tea bag. Stir until desired strength. Remove the bag and set aside to cool.
