Lemon zest –A hint of citrus flavour is traditional, and it really does give them the perfect finishing touch! Place the madeleine tin into the oven, immediately turning the heat down – 180 C / 160 C fan / 350 F / gas mark 4 – and baking for 10-14 minutes. The madeleines should be golden brown and generously risen, with a distinctive nipple-like peak in the centre. Once chocolate reached 40-45C / 104-113F, immediately add 5% callets – so in case of 150 g chocolate add 7.5 g callets (callet=chocolate chips of the same chocolate you melted) Classic Madeleines glazed with Valrhona Passion fruit chocolate - will easily pop out from the tin if chocolate correctly tempered 5. How and why temper chocolate The company offers both an all 36 count madeleine baking sheet and a mini madeleine pan - perfect sizes when entertaining guests or just need more than one dessert going at once.

Sift the flour over the top of the mixture. Including any wholemeal husks and pour the melted butter around the side of the mixture.
