There are many others yearly variations on the rum but this one along with the Sistema Solera 23 has been available for a number of years now. At first it is som alcohol on the nose but if you let it rest in the glass for a few minutes the alcohol disappears and you find toffee, spice and vanilla. If they are adding a mixer, they are totally missing the experience and don’t have a right to rate this one. Like the 23 it also features some added sugar, the results of which can be found on my Hydrometer tests page. Ron Zacapa XO Rum is produced in the highlands of Guatemala where it is distillled from fresh cane juice.

In some ways I found the 23 to be very slightly vegetal (slightly agricole like in some respects) however this rum has huge notes of Christmas Pudding. Zacapa does not itself as being produced using “sugar cane honey” and that’s very appropriate because this rum really is as sweet as honey! I had some friends over for a rum tasting and everyone's eyes lit up when they smelled and tasted this one.
