Savoury smoke, more luscious fruit – a sweet, baked apple pie with a slightly caught crust. A little hot, with a blast of cayenne pepper. Some orange zest and ginger playing catch-up, but the enjoyably aromatic smoke is quite dominant. Finish During the 1970s, experimental Glenisla malt whisky was made at Glen Keith, destined primarily for use in the Chivas Brothers’ blends. Glenisla was made using both peated malt and peated water (the water was flavoured with smoke and then run through a still to concentrate this smokiness). In was not until recently however, in 2006, that the first bottling of this extremely rare whisky became available courtesy of Signatory.

The American market for blended Scotch whisky has always been very lucrative. It was with this in mind that Sam Bronfman of Seagram, a part of Chivas Brothers, planned the build of the Glen Keith distillery. Glen Keith was founded in 1957 and distillation began a year later. The most popular blends being sold in America at that time were of a light, easy drinking style and, accordingly, Glen Keith started producing triple distilled whiskies, not unheard of in Scotland, but perhaps so in Speyside. The resultant spirit was light and perfect for blends, hence it is a major constituent in the 100 Pipers blend, which is currently among the top ten bestselling blends in the world.Spirit of Speyside Whisky Festival 20th Anniversary Edition Spirit of Speyside Whisky Festival 2019 Mouth-coating, almost oily, with rich mandarin before smoked meat builds through the mid-palate towards an explosive finish. The smoke is much less shy now, returning to bonfire-and-camphor country. Water flattens, rather than enhances, but brings added sweetness. Finish It ran triple-distilled malt from the word go and alternated it with double distilled until the 1980s, ran trials with a wheat mash, was the first distillery to use gas-fired direct heating (all its stills are now steam-driven) and in its time also produced heavy peated variants [Glenisla] one made with peat smoke being passed through water which was then concentrated and the other in the normal manner. There were also trials with different yeast types. The fact that the stills were different shapes and sizes helped in these innovative trials. Only three years older, but the smoke has retreated and evolved into the aromatic scent of olive wood embers, with an accompanying waft of the smokehouse. This allows the lush and luscious fruit to come through – ripe, bright clementine in particular. Next comes a little cigar box and richer cedar wood notes. The smoke just gentles these flavours along, without ever seeking to dominate them. Palate
