Decades later, in 1897, The New York Herald noted drinkers’ changing tastes in an article describing the drinks list at the Waldorf-Astoria hotel: Though the Manhattan and the Martini (made with Italian vermouth and Old Tom gin) were the most popular of the lot, the article emphasized a new, drier drink, consisting of equal parts French vermouth and Plymouth gin. “The present demand is for the dry,” wrote the author. Prohibition dealt Old Tom its final blow: Not only was there little incentive to bootleg the style, there was even less to resurrect it by the time Repeal rolled around.

Hillgren’s passion for the juniper predominant spirit took him all around the world in search of knowledge and inspiration, and finally culminated with him setting up a distillery in the small village of Dala, just outside Härnösand in the High Coast of Sweden. The Best in Category Award for International Contemporary Gin was split between four winners: Extra Srl, Gin Taggiasco and Lakospiriti di Lakovic Andrea, La Gass Gin. Both of these gins are Italian and are not yet available in the US. The other two winners were, Republic of Freemantle, Full Bodied Gin, and Turner Stillhouse, Three Cuts Gin (Distiller’s Release). Both of those gins are Australian and neither is yet available in the US although they are available from online vendors in Australia and the United Kingdom.

Hernö Old Tom Gin is made from the same distilled gin as Hernö Gin, but with an extra amount of Meadowsweet added in the distillation. After diluting it down to 43%, a touch of sugar is added, which lifts the floral notes, releases an array of juniper and makes the gin even smoother. On the nose, Hernö Old Tom has a familiarity about it and is definitely a close sibling of their London Dry, It’s grassy, floral and fresh, with sweet citrus and juniper supporting. There’s a subtle hint of vanilla as I revisit. It’s quite transportational and takes me to the remote fields and forests of Dala, and the distillery’s home.
