Sprinkle some crushed Maltesers over the cake and place some in the chocolate too before setting it on the side or in the fridge. Hi Alison, once it's been made and left to set you can't do anything to change the texture, but you can still enjoy the cheesecake and it doesn't affect the taste at all. Also, If you don’t want to use the Malteser spread, you can use 300g of Dark or Milk chocolate on the top. I could very happily tuck into this one, so if i get a chance to make one this year I shall try this one as it looks so scrummy. Pour the whole lot into the lined tin, smooth down then add the remaining chocolate mixture to fill in any gaps.

I have a feeling that these could be the cheesecake that changes my son's mind about not liking cheesecake (weird I know) but if not more for the rest of us! Some people like to add salt to cake recipes and some don't, so I'll leave that up to you as it won't affect the bake. When I made this cake it was ridiculously hot so I ended up leaving it over night, but I doubt it would take that long - it just got too late to wait for it!If you've never made a no bake cheesecake before, I highly recommend reading through my guide first! You will also need to replace the Maltesers with a gluten free alternative, I recommend Schar's Delishios. Many marshmallows contain beef or pork gelatine so check the packet if you are serving this rocky road to vegetarians. Although you can make this cake gluten free, because Maltesers and malt powder are not gluten free, they will end up being chocolate cupcakes with a vanilla buttercream.

Hi Lydia, you can mix Malteser balls into the filling if you like, but I found that the middle crunchy bit does not cope well with all the moisture from the filling and disintegrates. It was just a bit too sweet for my taste so I would reduce the amount of sugar next time, but other than that it had a really nice malt flavour to it. To make the buttercream, mix together the butter, icing sugar, malt powder, vanilla extract and milk until smooth. Instead it is a malt biscuit base but it really works as a replacement and potentially better than a regular shortbread.Divide the mixture between the cupcakes cases, and bake them for 20-25 minutes or until a thin skewer or cocktail stick inserted in the centre of the cupcakes comes out clean. It is really important to stick to the ingredients and use full fat cream cheese and double cream (a cream with a 48% fat content), both of these ingredients are essential to ensure the no bake cheesecake sets. If the filling is too runny consider using more cream cheese and less cream or add some gelatine to stabilise it.

Caster Sugar – Golden caster sugar is my favourite for it’s slight caramel flavour, but regular caster sugar will work too. Ive never made a malteser rocky road or even any other bake with malteser which is strange as i do rather love them.I'm a huge fan of Bounty chocolate bars so I'm now wondering what that will be like as a chocolate spread.
