Fortaleza crafts Tequila using traditional methods such as cooking the agaves in stone ovens, extracting the juice from the agave using a 2-ton tahona stone, and fermenting them in the open air without the use of yeasts. Cheese: After aging in oak barrels, the soft profile of reposado fits the creaminess of brie and the smoky flavor of gouda. If you want to change things up, forget the wine and try a Tequila and cheese pairing night instead.

Nose: Pineapple, oranges, honey and butterscotch. Melted butter, brown sugar and cinnamon glaze. Subtle vanilla. And a ripe light colored fruit that is nearing an over ripe state.The insights I’ve gained aren’t just from books or hearsay; they are the result of hands-on experience, countless tastings, and an enduring passion for these spirits. When I’m asked what tequila tastes like I tell them to try Fortaleza. It’s made in the most traditional way. It’s classic tequila in my opinion. This Reposado has a nice nose. I taste the agave followed by mineral brine and a complex mix of citrus and slight white pepper. The finish is short to medium with the absence of an alcohol burn (smooth). It’s a pleasant sipper. All aficionado’s should have Fortaleza in their collection. TASTE- medium oils, nice agave presence, buttery and earthy with cinnamon, some vanilla, and spice. Nice presence of citrus, vanilla, caramel, olive and some fruit. This is deliciously balanced and totally amazing. Flavor: All Tequila is made using agave, so it carries a natural sweetness. While some Tequilas are mixed with additives like sugar cane or molasses, good reposado is 100% agave, which adds some flavor. The wood of the barrel adds hints of dried fruit and warm vanilla to the spirit. When it comes to Tequila, the sweet agave taste is the highlight of every sip. The balance between the subtle oaky flavor and complementary mixers and garnishes is achieved through precision and a master blender's expert palate.

There are no size restrictions on the vessel in which a Reposado is aged so they can vary from traditional 220 liter whiskey barrels, to large wooden vats called pipones. The name “reposado” translates to “rested” in Spanish, reflecting the time it takes to qualify as a reposado. Nose: All the usual goodies. Green olives and white pepper. Dusty minerality. The sweetness and savory notes of this Tequila are perfectly balanced, and the oak flavor is prominent while the vanilla flavor is kept to a minimum. Each bottle is hand-blown by artisan glassmakers and topped with a handmade cap designed to resemble the heart of the agave plant making a good token. NOSE- some parmesan cheese and olive brine, citrus, buttery, caramel, nice cooked agave, and anise. It is delicious, silky but bold, balanced and tasty.

Although Añejo Tequilas are not usually my preferred choice due to the risk of losing the unique agave taste and taking on a bourbon-like flavor, Fortaleza Añejo is an exception to the rule, and it is one of the most intricate Tequilas that I have ever tasted.
