I now have a friand tin (a basic silicone one for starters!) Don’t know how it will perform, but I’m hopeful. I've never heard of friands but these pretty treats are perfect for Valentine's Day. I love the options for different types of berries and the tips on star anise.

These sound simply amazing. I’ve never heard of them but with raspberries in them I know they will be delish! Reply You can use cake release spray to grease the tin if you like, but I always brush the inside of the tin with some of the melted butter – this gives the Friands a lovely golden crust. panch phoron 3 tbsp (a spice blend of mustard seeds, fennel seeds, nigella seeds, fenugreek seeds and cumin seeds), plus more to sprinkle Oh what a lovely surprise it must have been to find a friand tin in the UK! Happy baking and I hope you will enjoy this recipe 🙂 ReplyI think friands should actually have a rounded muffin top 😊 But I find that, if I add toppings to the friands, like raspberries or another fruit, the friands generally have a flat top. It seems that the fruit toppings weigh down the batter a bit, so that the cakes do not rise as much. There’s no need to use an electric mixer, simply whisk the egg white until light and frothy. LOL!! I do hope they will bring you a friand tin … what could be a better gift for a great baker like you? 🙂 Reply A tiny bit of Xanthan Gum (although if you can’t tolerate it, the cakes should still hold reasonably well without it). Oh macarons are also a great way to use up egg whites. I’ve only attempted them once or twice … but Ladurée make much better macarons than I do so I am happy to buy them 😉 And I’m happy to hear that your kids loved these friands. Reply Such an interesting looking recipe. I've never had a friand before but after reading this, I'm eager to try it soon (thankfully, I still have time before Valentine's Day).

When you pour in the cooled melted butter, it will look like you have a bit of an oily mess. Don’t worry – just keep gently folding in the batter until you have a smooth, shiny batter. Commonly asked questions Can I use frozen Raspberries in this friand recipe? Serve warm or at room temperature. Dust with a little confectioners' sugar if you like. They should be light and chewy!

Roughly fold in the edges over the vegetables a lit These look fabulous Thanh! I’m now on a mission to find that beautiful tin or something similar here in France, there must be one in some small corner! Reply I made them after a recent binge on Gluten Free Pasta, which resulted in an untold number of egg whites lurking in the fridge. Fortunately, I always label my egg white pots with how many egg whites are in each… It makes it so much easier to choose the right recipes to use them up. Friands are incredibly popular in Australia and New Zealand. Once you’ve tried one, you’ll understand why! what are friands made of?

That baking tin is sweet, I love the little flower it has embedded into it. I’ll have to keep an eye out for one somewhere. I love lemon and these look perfect for spring, lovely and light. These friands are absolutely delicious! I’ve used this recipe a few times and they always turn out beautifully. Icing sugar: Make it at home using a coffee grinder or use store-bought powdered sugar (confectioners' sugar). Take the pastry out of the fridge. Divide the chilled pastry into six portions – each one should be roughly 100g.Please do keep a lookout for this friand tin! As I’ve mentioned above, I’m sure you could use it for cakes other than friands. In fact, I happen to think they make a great alternative to your usual muffin tin 🙂 Reply
