The only ingredients you really need are different flavours of jelly (which you can get from any supermarket) lots of bowls and cups to serve. It is incredibly easy to make – most of the time is spent waiting for the layers to set before adding the next one. The layers also need to be cooled before they can be added onto the slice so that it doesn’t melt the previous layers. How to Make Layered Rainbow Jelly But, I’ve realized it also makes a great addition to almost any kind of tea, milk tea or even lemonade. I encourage to experiment for yourself! Once the white layer is set, pour the green jelly over the top, gently tilt the pan to distribute evenly. Return the pan to the fridge for 30 minutes to set and make the next jelly layer - yellow.

I didn't grease mine and the jelly pieces came out fine. You could spray with a little oil if you wish or with a thin layer of mayonnaise. You can prepare your jellies a day or two in advance and refrigerate them, until you’re ready to enjoy them.

Try not to shake your agar before it’s set. It firms as soon as the liquid falls bellow 113°F (45°C). Once the white layer is set, pour the orange jelly over the top, gently tilt the pan to distribute evenly. Return the pan to the fridge for 30 minutes to set and make the next jelly layer – red. The ratio of agar agar to liquid will vary depending on the form of agar agar you use. There is agar in strips, flakes and powder (this one is the easiest to work with and the one I use). I’ve only tried rainbow jelly from the chain Tea One, and unfortunately, my recipe doesn’t have the same firmness that I love in their jelly tea.

It’s commonly used as a topping in bubble tea or boba tea, but it also goes great with yogurt or ice cream, just to name some combinations. Once the green layer is set, pour ¾ cup of the white layer over it and gently tilt the pan to distribute evenly. Return the pan to the fridge for 30 minutes to set. Once all the layers are done and the jelly is set, slice into 1-inch squares. If you use a serrated blade knife, you will have marks in the jelly, if you use a flat knife, like a paring knife, you won’t have any marks. A small spatula comes in handy when trying to get the jelly squares out of the tray.Rainbow Jellies An eye-catching little dessert, these wobbly Rainbow Jellies are a fun and colourful way to curb your sweet cravings for fewer calories!
