We use the Marcato Atlas 150 Pasta Machine here at the Sourdough School to make our diversity sourdough pasta recipes for the Sourdough Club. When it comes to slicing pasta sheets into individual noodles, the Atlas 150 comes with a two-in-one cutter.

We also tested a version of the Atlas 150 with an attached motor and found that getting rid of the hand crank isn't worth the extra money. If you like the way the machine works, but want to have removable blades, I recommend sending the machine to Mona Kissel for modification. An extruder is the only way to make tubes and spirals like penne and fusili—no tabletop cutter, Atlas 150 or otherwise, can do that—but it's also quite a bit more expensive.
