Makki ki roti is an unleavened bread that can be made traditionally (in a tandoor), or using a tawa (flat skillet). Makki di roti are popular flatbreads from the land of Punjab. This famous maize flour bread gets its name from the Punjabi term for maize flour: makki ka atta. Place the roti in the skillet. As it cooks, the dough will change color and have a dryer look. Turn the roti over using a spatula. You should see golden-brown spots on the semi-cooked side. Place a piece of dough and with the help of your fingers and/or palm, gently press [flatten] the dough. Makki Ki Roti and Sarson Ka Saag is a match made in heaven.
