We do not recommend the use of highly filtered, de-mineralised or distilled water as this may affect the taste of the coffee and how the espresso machine is designed to function.I don't mind pressure gauges, but I can take them or leave them, and I can't really do without a shot timer. This is a feature associated with speciality coffee, and it's a very rare feature to find on lower-cost machines, except for Sage machines. By this review it seems like this one would do the job but I see that the time for making one latte is quite long and you keep on saying its a machine for home. I’m not sure if Kev is still the best barista in 2022, but he was definitely one of the best in 2018.
