Is there a simple way to break down the different types of coffee beans, grounds, blends, brews etc..? There are a lot of different options which seem pretty overwhelming right now. Steven: We first developed Revelation, or TM Espresso as it was called in those days, in 1994. The first of the third wave cafes were opening up, the coffee chains we know today and the average size of the coffees sold were 12 oz. or 16 oz. large. When we set out to create our espresso blend, it was about having enough heft behind the flavour of the coffee to stand out in those sort of size drinks. Inside every coffee bean you’ll find a number of organic materials such as acids, sugars, proteins and of course, caffeine. During brewing, these materials are extracted from the coffee in varying degrees. Calculating the caffeine content for an average cup is always going to be difficult due to a large number of factors that affect the extraction: Up till now, I've been using a coffee maker fit for beans and ground coffee, but honestly it's pretty bulky, takes up a decent chunk of counter space and is a bit of an eye sore in general. I've been using Tim Hortons for a while (very kindly gifted to me) and it's really tasty, but running low now and looking for some other options in general.

Jeremy: Revelation has slightly changed over time due to a number of reasons, I think the changes come from three different directions. Our founders, Jeremy and Steven, developed our Revelation recipe and roast profile and what better way to celebrate it than to sit them down for a Q&A. Have a read and discover exactly how Revelation came to be and learn a few secrets behind one of our most popular coffees… Jeremy: Putting a blend together, whether espresso or filter, you’re trying to find complementary and harmonising flavours, ones that work well with each other not just in that moment, but sequentially. I think a good espresso should always have a beginning, a middle and an end. The all over the palate, progressive experience is what we wanted Revelation to offer.Steven: I like to think of Revelation as the personality of Union. Although we created Revelation from a humble beginning, we were driven by curiosity, liberation and this has enabled us to continue our everlasting pursuit for some of the most extraordinary coffees in the world. Steven: The coffees used in Revelation have changed slightly over the years but it’s still anchored by Costa Rica and Guatemala. In the early days, we used a lot of Kenya AA coffees - they were quite expensive to use in blends but they worked well. But implementing Union Direct Trade in our sourcing from Kenya was difficult, especially achieving financial transparency for farmers and workers. Our partnership with Maraba in Rwanda became integral to Revelation when we realised that their great coffee worked even better than Kenya AA - boosting the chocolate notes on the mid palate, preserving the round sweetness on the front of the cup which balanced nicely with Guatemala coffees. From approximately 300 initial members in 2001, the cooperative has expanded to over 1,500 members, of whom about 35 per cent are women. We have worked with the cooperative to fund processing facilities and to provide training in growing high quality coffee, allowing farmers to earn more for their crop. The premium we pay has contributed towards health insurance for cooperative members, improved housing with hygienic flooring, tile roofing and furniture, and economic stability in the local area through the creation of shops and local banks. Being able to eat three balanced meals a day has resulted in improved nutrition and health.

Expertly Crafted for Optimal Flavor and Freshness At Union, we decaffeinate our coffee using the CO2 process. Although it sounds quite scientific, it’s a natural process which only uses water and carbon dioxide. Water is steamed onto the unroasted coffee beans to open their pores and enable liquid CO2 to absorb the caffeine, this is then pumped into an “evaporator” where it’s converted into a gas again to be separated. Want to learn more? Jeremy: We were also working with a lot of restaurants serving straight espresso. So, the idea behind our first espresso blend was that it should have sweetness, it should be smooth on the palate but still bold enough to come through that milk. Water hardness – water hardness is a measure of the number of certain minerals (Calcium and Magnesium ions) in water. Water hardness has a large effect on the extraction of different compounds found in coffee (including acids, flavour compounds and caffeine).Steven: Its versatility makes it very popular. It presents a range of different approaches for people, almost whichever way you brew it you get a great cup of coffee. However you brew it - espresso, cafetiere, filter - Revelation is a balanced blend which makes a wonderfully full-bodied cup. I still enjoy brewing it from a cafetiere!

Does this differ from person to person? Yes! Caffeine metabolism is heavily affected by environmental factors (e.g. smoking, pregnancy, bodyweight, altitude) as well as genetic factors (some people can have faster or slower caffeine metabolism based on variations in their genetic makeup). Roast degree – caffeine is relatively stable at high temperatures, so it does not break down during the roasting process. If you weigh your beans before brewing, you may end up with more caffeine in your cup when using a darker roast coffee, as darker roast beans weigh less than lighter roast beans (due to moisture loss during the roasting process). Darker coffees are also more soluble, meaning you may be able to extract more of the caffeine present in dark roast coffee than a light roast.No! Despite the classic intense taste of espresso, on average there is more caffeine per serving in a filter coffee. Espresso contains more caffeine per ml (around 2.1mg per ml on average) than filter coffee (around 0.4mg per ml on average), but the serving is a lot smaller meaning the total caffeine in a single espresso is less than the total in a cup of brewed filter coffee. There’s an average of 96mg of caffeine in one cup of coffee (8 fl oz / 240ml) when filter brewed using 60g of ground coffee per litre. There’s an average of 63mg of caffeine in a single shot of espresso (1 fl oz / 30 ml) when using 7g of coffee. Hey everyone! Recently I've been pretty curious about getting into coffee as a hobby.
