Bake your blondies until they are just set and starting to pull away from the sides of the tin. They will continue to cook and firm up a little as they cool, so don't worry about the centre cooking through. Usually, if you make a bigger batch of a traybake like blondies, you could try adding 10 minutes onto the cooking time and reducing the temperature by 10-20 degrees. You only need to cook your blondie slab until it is firm and golden around the edges but still soft in the middle. The centre will firm up as it cools, so don't make the mistake of thinking it should be golden to the middle. However, your blondie batter should be very moist from the eggs, melted butter, and jam and once heated, the chocolate chips should melt too. This means it should be hard to cause this batter to dry out. So if your batter is dry, it's more likely that you added too much flour or too little of the wet ingredients.
