This clear Italian liqueur is flavored with the essential oils from star anise or green anise, giving it the unmistakable character of licorice. It’s often served neat, and when it has that coffee bean in the glass, it’s referred to as sambuca con la mosca (“with the fly”). (Incidentally, it can also be served with three beans to represent health, happiness and prosperity, or seven beans to symbolize the seven hills of Rome.) The Marche liqueur sambuca is the official Marche liqueur made from alcohol flavored with star anise, fennel, and flowers, sugar, and water. Although it is not magical, it is made by distillation, the same process used to make grappa and gin. Sambuca is covered by a milky cloud when it grows on its surface. Terpene, a component of alcohol that is produced during distillation, is the source of this substance. When you add water to ethanol, the ethanol loses its ability to bind to terpene molecules. The flavors are balanced by sweetness, bitter notes, spicy hints of spice, and pepper. If you don’t like anise, fennel, or licorice, this isn’t the right liqueur for you.
