They go down well at any time of day and are small enough to enjoy without worrying about the size of your hips. Jam Sandwich Creams are a little like Jammie Dodgers. It my opinion these are a little bit nicer. The biscuit is phenomenal and they are sandwiched together with a delightful jam in the middle. If your ideal whipped cream biscuits include tall, fluffy layers, then you’ve come to the right place. After years and years of practice, I’ve learned a handful of simple ways to achieve those elusive mile-high treats: Two golden shortcake biscuits are sandwiched together with a fruity jammy filling, revealed by a small cut-out heart on the top layer. This go-to biscuit recipe comes together in just minutes, so they’re not only a great breakfast or brunch option when the troops are hungry, but they’re also a nice addition to the bread basket at supper. Busy weeknights can still include homemade biscuits!

Self-rising flour:a common pantry staple in most Southern households, self-rising flour is simply flour with the leavening and salt already added.I prefer an extra-fine soft winter wheat flour made by White Lily. This low-protein, low-gluten flour gives Southern biscuits that perfectly crisp-on-the-outside, light-on-the-inside texture. There’s something so nostalgic about these simple shortbread biscuits sandwiched together with jam. And right now I am ALL about riding that nostalgic baking wave (case in point? Pineapple Upside Down Cake). Make Ahead:While they’re best served warm, straight from the oven, you canbake the biscuits up to 3 days in advance.

These ‘not so little biscuits because I used a rather large cookie cutter’ are so easy to make and look amazing! Feel free to use your own biscuit recipe if you have a personal favourite. This recipe was created and photographed for us by Aimee - our placement student from 2017 - 18 and gifted and talented baker; thank you Aimee!

Arrange the biscuits with sides touching.Place the biscuits in the skillet so that they’re all touching their neighbors. This will help them “climb” in the oven so that you get that great, high rise.

8. McVitie’s Hobnobs

You need to do this on both the biscuits with heart cut out AND the ones without, as the pressing down action makes the biscuit spread. STEP 3 Roll out the dough and use the cutters to cut out the biscuits. If you are using the Dexam Jammie Dodger cutter, press down with some force to impress the design. Cut out heart shapes in the middle of half the biscuits. My recipe for custard creams is anything but traditional. I’ve used a variety of luxury ingredients to create a bake that is out of this world. The oven must be very hot— in this case, 425°F. When the cold biscuit dough interacts with the high heat of the oven, the water in the cream heats rapidly and releases steam, pushing the dough upward. You can use the same basic biscuit dough recipe to create custard creams and iced rings if you like. HOW TO MAKE JAMMIE DODGERS

Note: when stored in alternative jars, tins or Tupperware containers my biscuits soften within a day or two. They are still tasty but that lovely crunch is missing. We Brits love a cup of tea. In fact, we drink 60 billion cups of the stuff every year*! And there’s nothing more satisfying than dunking a cheeky biscuit into a cuppa. If you are using the Dexam cutter make sure you press down hard to create the impression of the pattern. I prefer Foxs Jam n Cream Rings to Burtons Jammie Dodgers. It's more like an updated version of Jammie Dodgers. The crunchy shortcake biscuits are sandwiched together with sweet, vanilla creamy goodness and paired with a layer of tangy strawberry jam. This makes a perfect afternoon treat with a nice cup of tea. But, be careful! They will not last long as they are too good!To bake, use 2 x 20cm round cake tins. Line the bottoms with baking paper and lightly grease the sides. Jest how good are these. Delightful, delicious, lovely!..everything that's good about English biscuits are here in these small bombs of sweetness. There is nothing that can compare with the shortcake biscuit and the tangy jam, paired together with the beautiful layer of creamy heaven. What a delight to eat. Almost too good to share. I like to think of my homemade Custard Creams recipe as the lovechild emanating from the marriage of the accomodating Custard Cream and the woefully incomplete Jammie Dodger. Firstly, I love jammy dodgers be it the biscuit and jam, however, these are that next level you are looking for. The added cream layer makes these biscuit that more delicious and dunkable in tea or coffee. I can't say how good these taste without doing them a disservice. If you want an all round tasty biscuit to enjoy with a cuppa or simply on it's own then please get these. Meanwhile, to make the filling, whisk together butter, icing sugar and vanilla until pale and fluffy.
