Toffee Vodka– this popular flavoured vodka uses just two ingredients and is so easy to make at home.

Once the whisky is ready to strain (2 to 3 months), a suitable, sealable glass bottle is required. It is fine to save, wash and reuse old spirit bottles for the purpose. But if giving as gifts, it is nice to use a special bottle. Bramble Scotch Whisky Liqueur is delicious to drink after supper, especially with cheese, or in a hip flask to use as a nip when out walking in the hills. Its rich, full bodied, almost port like flavour makes is perfect for use in gravies and sauces for game and red meat dishes. The whisky used to make Bramble Whisky is the cheapest you can find. Seriously. You do NOT want to waste good whisky on this one. The cheaper the better. It’s going to be sweetened and infused. So, unless you want to be consigned a place in hell, don’t adulterate the good stuff. Preserve jar(s) for infusionGo glam with your bramble by adding a splash of champagne to the mix. Just make the drink as normal but reduce the amount of crushed ice by about a third to leave room for the fizz. Then top with 25-50ml of champagne, mix gently, add a bit more crushed ice, garnish and serve.

You could add some spice, such as a pinch of allspice, for a real winter warmer. Go easy on them however, as a little goes a long way. Experiment with your favourites. Using a mixture of Scottish brambles, masses of real fruit is steeped in Scotch Whisky with a little sugar and magic to create the infused drink that we know as Bramble Scotch Whisky Liqueur. Is there anything else I should know? Step one – Choose a mid price supermarket own label blend as the base for your bramble whisky (or whiskey!). To achieve the best results, you want neither cheap and nasty nor premium malt (which would be a waste).When the berries are filtered from the whisky, do NOT throw them away. They are a ‘superfluous’ treat that can be savoured and enjoyed. After all, what’s not to love about boozy, sweetened fruit? My bottles of choice are the Kilner clip-top square glass bottles… as 1 litre bottles. Or if giving as gifts, they can be bought in sizes of half litre, quarter-litre, and even third of a litre.
