I wish I could tell you to substitute homemade egg replacer in any and all of your gluten-free recipes calling for eggs. But this is where things become problematic: eggs usually play a major structure-building role in gluten-free baking. Chia eggs are ideal for recipes that require the gel texture that eggs provide. Make a chia egg by mixing water with chia seeds and allow it to set until it has a gloopy consistency. This method may require a bit of trial and error to get right, but ¼ teaspoon of baking soda for every 1 tablespoon of vinegar is a good rule of thumb. Silken Tofu

As this was a first attempt, I went with option two. Egg replacers have clear instructions for how to mix them to create a whole egg, egg white etc so it felt like a safer option. Plus, I’d do just about anything to avoid cooking with aquafaba at the best of times. Aquafaba is an excellent vegan egg substitute and has similar properties to whipped egg whites. It’s ideal for making vegan meringues, macarons, buttercream, souffle and much more. Transfer the dough into a pipping bag. Pipe the choux on a baking tray lined with baking parchment. Put the tray in the oven and bake for 45 minutes. The vegan choux pastry needs a bit more time in the oven than the vegetarian ones. Baking Powder–A large amount of baking powder (about 1 ½ Tablespoons) is a great way to make batter rise. The only time I use this substitute is when I make pancakes or vegan waffles.
