Lime cordial, a really citrusy zing that dances on the tongue. There’s also some fizzy lemonade flavours here - it’s actually lost all of the red fruit and gained all of the citrus in the world. It's got some sweetness too in the form of candied ginger, which also provides a little warming heat. Finish is still pretty short with a really thin mouthfeel. Conclusion We’re getting a lot more sherry bodega funk on the nose now, along with a much meatier smell reminiscent of BBQ pork ribs. Behind that, there’s some instant coffee, caramel syrup and vanilla bean. There’s a hint of red currant jelly and a little freshly whipped cream here too. Super malty with a touch of rancio. It’s quite creamy on the nose, there’s also a little yeast and the aroma of a freshly opened tin of sweetcorn. Going deeper there’s a touch of marzipan and the very faint hints of raisins. There’s also a touch of milk chocolate you would find in a Cadbury’s creme egg. Palate These are interesting releases for collectors, and speak to The Dalmore’s long history and interest in pushing boundaries on what is possible for Scottish single malts. But let’s be honest: Most of us won’t get our hands on those bottles in our lifetimes.

Dalmore 12 is aged for the first nine years in American white oak ex-bourbon casks, before half is transferred to ex-oloroso sherry casks for the final three years. Nose Nose: Straight away it is gently sweet and fruit-forward. As it opens up, notes of red grape skins, morning dew, brown sugar, vanilla, and lemongrass appear one after another. We're going into this with an open mind.. Is Dalmore flavoured with chocolate orange? This has striking similarities to the 12 in terms of the zesty orange citrus and rich dark chocolate. There’s more of a viscous mouthfeel here reminiscent of marmalade spread on toast, and some ground ginger spice lingering too. When taken as a whole, the various incarnations of The Dalmore are somewhat hit-and-miss for me. This is not necessarily a bad thing. I enjoy having distinct voices in the chorus offered by any label. When each release seems to be indistinguishable from another, it becomes difficult to defend the illusion of choice within the brand. With The Dalmore, there are clear differences between this bottling, the 12-year-old, and the 18-year-old derivations. Even so, partnering with such a fledgling group of wineries must have presented some level of risk. Happily, the risk paid off as the casks The Dalmore received—and continue to receive—from González Byass are now irrevocably tied to the whisky’s successful style. The whisky is matured in American white oak ex-bourbon casks, but the finishing is where it gets a bit more complicated. Multiple sherry casks are used, including an unspecified Amoroso as well as González Byass’ own Apostoles and Matusalem Oloroso sherries. Those latter two casks are, naturally, exclusively available to The Dalmore Distillery due to their longstanding relationship with González Byass. Appearance: The amber-adjacent color of pure sugar caramel (as opposed to butter caramel.) High viscosity.
