Based on my experiments with the Masterbuilt charcoal grate mod, here’s a step-by-step guide: This charcoal is large enough to not cause airflow issues, along with being clean burning with no additives. The standout feature of the Masterbuilt 560, aside from its intuitive design, is its ability to control the temperature of the BBQ using a digital fan system found on its underside.

Refilling is also very easy. Remove the latch from the hoppers lid, and the fan will immediately stop blowing. You refill the charcoal or briquettes and close the lid again. The fan then starts working without the temperature in the kettle having dropped. By using these two methods, you can smoke when and how much you want. With the first-mentioned method, you can also smoke at higher temperatures. Which just isn’t possible with a lot of other smokers. If you’re going to barbecue low and slow but want less smoke, that’s possible too. No smoke at all is, of course, not likely. There is always some smoke coming from the charcoal. And lots of smoke when the charcoal is damp After cooking a variety of different foods I can say the grill performs exactly as advertised. The temperature control is very accurate. It maintains whatever grill temperature you set.They are just held in place by tension. I actually used some extendable hot dog cookers I found at the local grocery store for the rods. Temperature Range: Starting with the firebox, here’s a step-by-step guide based on my experience with the Masterbuilt 560 firebox mod: I’m pretty sure that I saw the team using Kamado Joe lump charcoal when we did the interview. I know it can run off of both lump charcoal and briquettes, so I would try a bag of lump charcoal and maybe some B&B or Royal Oak briquettes to see if it made a difference. I’ve seen people use the compressed wood firestarters for this unit as well as the tumbleweeds, and both seem to work. I’d maybe look at changing the lighting method before I made a big change in charcoal, but that’s just what I would try first. Best wishes with your 560! I really can’t wait to own one, just trying to find a Canadian mod producer maybe cheaper and I can afford this beautiful bbq smoker . The Gravity Series performed well in both low & slow smoking and hot & fast grilling tests. Reverse searing a 1 inch ribeye went very well. I first cooked the steak slowly with Kingsford Original briquets and 1 small wood chunk in the hopper at a cook temp of 225°F until the internal meat temp registered 115°F. Then I removed the steak from the grill to prevent overcooking while I cranked the Gravity Series up to 700°F on the control panel. Once the display read 700, I put the steak on the “sear” side of the grate. It smoked and sizzled instantly, and my mouth started watering. After 1 minute, I flipped the steak and saw grill marks galore!
