Disodium guanylate is another flavour enhancer that is commonly used in Doritos. It is derived from nucleotides, which are naturally occurring compounds found in all living cells. Some people may have an allergic reaction to disodium guanylate, but it is considered safe in small amounts by regulatory bodies. In the United States, Frito-Lay eliminated trans fat from all Doritos varieties in 2002.
