When using a fruit filling such as this blueberry jam, it’s important to keep it contained by piping a circle of frosting around the cake, before adding the jam, then top with a thin layer of whipped topping. Too much, and this will leak out the sides of the cake! Less is more! For the skirt, we did 2 colors. The top color was more heavy on the blue and the bottom was heavier on the lavender color. To get the “ombre” look, we filled one pastry bag with the blue, another one with the purple and then put BOTH bags (no tips in either bag) in one bag with the star tip. That way the two colors combined without mixing too much. It gave it more of a swirled look. Put a crumb coat of frosting on the cake. I never knew what this meant until now. It means to make a thin layer to cover the cake. You can make it smooth by taking a piece of paper and curve it slightly, from the bottom to the top use the edge to create a smooth surface. Be sure to spread frosting around the hole at the top.

Find your “molds”.The “skirt” of the cake is baked in one or two 8″ cake pans and an oven-safe glass bowl (or two glass bowls, one medium-sized and one small sized). That’s all you’ll need for the base of the cake, or the skirt. Get creative with what you have. Just make sure the bowls you are using are oven safe. A ceramic or stoneware mixing bowl will work great. The size of cake will fit any Barbie-size princess doll or Barbie doll. Cover the seam where the bodice and skirt meet… And now time to add the criss crossing of the ribbon onto the bodice. I rolled out the pink really thin, and then using a pizza cutter cut it really narrow. This way I didn’t have to try to roll it evenly into such a small snake! I painted the bodice with clear vanilla (see, you can’t even see it!). Now one strip at a time start cutting and building the criss crossing!Her skirt is all shiny, so using a brush (not one you EVER use with paint or make up or anything, JUST for food!!! Anyway, use the brush and edible glitter, or luster dust! I brushed it all over the skirt, bodice, etc… It adds that final shine/glow to the dress. Practice piping on wax paper until you get comfortable creating your designs. Hereis a great post on some simple piping techniques to try. I used this cake pan 2 times already. Both were with Barbie dolls. The cake was chocolate. I never use box mixes since I do not like the taste. I found that I had to bake my usual recipe15 min longer than usual. I used Magnolia Bakery’s Chocolate Birthday Cake recipe. (it is enough for a 9″ three layer cake and fills the wonder mold pan perfectly.) Since it is such a moist cake it didn”t dry out as much when I baked it longer. Put the bottom layer of your cake on the serving platter or cake stand that you will use. Slip some parchment paper a few inches wide (or waxed paper) under the edges of your cake about ¼ in. You’re going to pull these out after you’ve decorated it and it will give you a clean plate and smooth edges. Rapunzel’s underskirt has a lot of detailing in it so I decided to roll the fondant out onto an impression mat and then used that to cover the cake! As you cover a cake the fondant tends to stretch a bit so to keep the details I just focused on keeping one section pretty, the rest I didn’t mind if the impression got stretched and warped.

Buttercream frosting – make sure butter is room temperature, otherwise frosting doesn’t come out very smooth Instead of angleing the legs I make one additional 9″ round cake layer and put it below the wilton mold cake. This usually means doubling the recipe.

After the cake is good and chilled, start covering the whole mountain with frosting. I chose to do the paper drag again to give me a smooth surface. Since I doubled the cake, I doubled this too – and again had a lot left over. But I was paranoid about running out. Also, this was a little bit runny for me – but it actually worked well when it came to decorating that it wasn’t so stiff.

Get creative with decorations! You can use sprinkles or any shape or size, piping gels, or any other fun sugary ingredients you can find. You can also use our homemade cake mix recipe if you don’t want to use store-bought. This easy recipe just uses cake flour (or all purpose flour), sugar, baking powder, salt, and shortening. Add eggs, milk, and butter to the mixture to make your cake batter. Cut a small hole in the center of each. You are going to drop your doll into this hole. Make it as small as possible. I couldn’t find a cookie cutter the right size, so I actually make my circle cut pattern with a soft-boiled egg holder lid that my mother-in-law gave us. (First time I found legitimate use for it.) I’ve seen some amazing characters created for cakes – most made out of fondant. They are truly works of art! But few can sculpt these beauties for their own cakes made at home. So for this cake, I used a toddler doll version of Rapunzel, which I bought at my local Walmart. It even came with her adorable little chameleon friend Pascal!! This helped create an amazing cake for a 3 year old, and she can have the doll and toy to play with later! In the fold of her skirt, I added dark purple swirls (again with the Princess Shimmers) and in the middle of each flower placed an edible pearl. I also used the silver shimmer again to fill in some more texture to mimic the glitter on her actual skirt. I also added some definition to the fold in her skirt with the purple and outlined the bottom of the dress. Stir flour mixture into the batter alternating with the milk. Do NOT FORGET TO ADD ALL THE MILK. I did, and they were a little on the dhry side. Don’t let the frosting of this cake intimidate you. We made this basic 4-ingredient, 10-minute fondant recipe, colored it bright pink, and draped it over the cake. We used a small decorating tip to pipe some buttercream “pearls” on the dress and kept it very simple. You can add ribbon, icing, sprinkles, or any other edible decorations you like!
