Unlike most stimulus and receptor pairs in the human body, T2R expression increases the more that the stimulus (bitterness) is presented. So the more we taste bitter, the more we experience its effects (9). This same research team also identified how the taste receptors on the tongue signal to the brain to produce increased oral and gastric secretions, including bile and digestive enzymes (10).

Although it may seem counterintuitive, stimulating the release of stomach acid and digestive enzymes can help people with acid reflux. While most conventional drugs for acid reflux work to only temporarily reduce stomach acid secretion or neutralize it (like Tums), bitters help to re-establish proper digestion and strengthen the esophagus in the long run. The basic idea behind bitters is that they stimulate your taste buds to create more saliva (spit), which in turn jumpstarts your digestive system. You might not realize it, but saliva is one of the keys to digestion, contributing to the breakdown of starches and fats. This Constitution Bitters brand (there is another figural bottle with the same name), was put out by Stephen B. Seward andBurr S. Bentley of Seward & Bentley in Buffalo, New York. They also advertised their Seward’s Cough Cure and Alisma, a hair tonic. There are also listings for Seward, Bentley & Cheney,Ward & Bentley, andDaniel Seward & Co., that show obvious changes in partnership and ownership later in the 1860s. Stephen Seward even got his start earlier than that as his name occurs as S. B. Seward in the late 1850s on bottles and advertising etc. When this bottle mold was produced, Cheney had not yet joined the firm. With the 1864 date, this is a true Civil War-era bottle. The amount of alcohol in a single dose of bitters is very minimal. However, you can still make bitters without alcohol. People who are pregnant and breastfeeding shouldn’t take bitters. They also shouldn’t be given to children as they often are infused in alcohol. That’s where bitters come in! These herbs are gentle and beneficial in the long run. By incorporating bitters into your diet or supplement regime, you are telling your gut (and brain!) to gradually produce more digestive juices. Often times, this crucial difference between digestive enzymes and bile supplements, on the one hand, and herbal bitters, on the other, goes unnoticed. When you take it might matter though: If your goal of using bitters is to ease digestive issues, consumption should occur either directly before or after meals. Some clinical evidence suggests that using bitters could prevent or improve indigestion. Traditional Chinese Medicine Formulas
