In this chapter, various aspects related to chemistry, different processes used for argan oil preparation, quality control, oxidative stability, and authenticity assessment of argan oil are summarized in light of published literature. A few years ago, both types of argan oil (cosmetic or food) have found their place in the highly competitive international oil market. This is the result of its unique chemical composition associated with its nutritional and cosmetic properties as well as with scientific studies validating its claimed or empirically observed properties.
