You can serve this Manioc Flour Tortillas stuffed with any vegetable or meat filling of your choice or as a side that goes with soups and stews. In a medium bowl, mix the remaining 45ml oil with the yoghurt, horseradish, lemon juice, three-quarters of a teaspoon of salt and a good grind of pepper. Put the first five ingredients in a medium-large baking dish – ideally about 30cm x 22cm – add three-quarters of a teaspoon of salt and a good grind of pepper and toss to coat. Roast for 25-30 minutes, stirring once or twice, until golden and slightly charred, then remove from the oven and turn it down to 200C (180C fan)/390F/gas 6. Use a fork to smash up the parsnips.
