Four years of oak-ageing brings out a toasty base, with fresh pink citrus and crunchy green apple layering on top. He continues to maintain a policy of voluntarily limiting amounts produced to increase quality, while remaining true to the Bollinger spirit. In Cuis, a village to the north of the Côte des Blancs with Premier cru classification, lies one of Champagne Bollinger’s historic vineyards, one that stands out for the varied orientations of its slopes. This method is unique in Champagne, with its use at Bollinger documented since 1890, and is one of the great style markers of the house. Then he met Joseph “Jacques” Bollinger, who specialised in selling the wines of Champagne, and Paul Renaudin, a born-and-bred Champenois fascinated by the world of wine.

This style stems from a solid base, rooted in 5 tangible principles: the House Vineyards; pinot noir; magnums of reserve wines; the barrels and time. Made from Pinot Noir with a dash each of Chardonnay and Pinot Meunier, this has fantastic depth of flavour. This rosé version builds on the brand’s rich brioche base, while introducing red berries and a touch of stone fruit. At Bollinger we let nature run its course; if the harvest does not reach vintage standards, we wait until the following year or even the year after that, so that quality always prevails over quantity.Unashamedly indulgent, Taittinger allows chardonnay to dominate this cuvée, adding a lively, refreshing slant on crowd-pleasing strawberries and cream. Madame Bollinger appointed him Chairman in 1971 but remained closely involved until her death six years later. You’ll find it wonderfully structured and velvety, with notes of fresh strawberry, redcurrant, cherry and spice.
