For me, that’s pretty close to the definition of a satisfying dram, and it’s one of the better Bunnahabhains I’ve tried. Bunnahabhain has since been described as a lightly peated malt, with enthusiasts occasionally leaning towards the opinion that there’s no peat whatsoever. In 2021 Bunnahabhain distillery released a new Cask Strength version of its Bunnahabhain 12 Year Old. Whatever the cask make-up, this is a great dram: one to be explored, savoured, slowly enjoyed, and one that will take me back to that sunny day on the remote north edge of Islay.

The distillery arrives a little late to the party, I’d say, as so many other distilleries offer a cask strength version of (some of) their core range expressions. I’m a big Bunnahabhain fan, if it wasn’t already painfully obvious (but not an uncritical one), so take my perspective here with that in mind.They all offer lots of opportunities to follow common threads and signatures and their myriad transformations across variable casks, ages, ABVs, OBs, and IBs. There’s a touch of leather milling around the middle of the nose here, with small blasts of orange zests in the background. Perhaps a new whisky alongside Bunnahabhain and Bruichladdich; a non-peated malt with less difficult pronunciation, perhaps? Bunnahabhain is a robust and complex spirit, unpeated and oily but with sweet notes of dried fruits and cereal, and it means that the spirit can really take on the big flavour profiles that come from the full maturation in the sherry casks.At Bunnahabhain, while peat levels have dropped from the 1960s onwards, they did start life smokier than today, something which has been revived with peated campaigns from the distillery since its re-introduction by Iain McMillan. It had some identifiable Bunnahabhain elements, but if I had it blind, I definitely wouldn’t have pegged it as the amped-up cask strength version of my beloved 12yo. The nose undiluted is very yeasty, there’s also melted butter on a crumpet, some black pepper, raisins, prunes, and stewed fruits. Bunnahabhain’s master distiller, Brendan McCarron, said: "We’re really proud of this exceptional release, which is a perfect encapsulation of our most celebrated expression.
