If your pasta is cooked before your sauce has reduced, drain it (keeping a few spoonfuls of starchy water, just in case) and mix in a tablespoon of olive oil. Keep the pasta covered until your sauce is ready. Napoletana sauce can be made ahead of time, 2-3 days, and stored in the fridge in a mason jar or airtight container.
