Swap in Different Proteins: The paella possibilities are endless. You can vary the protein used, but use the same method of cooking your sofrito, have a well-made broth on hand (use a broth that goes with the protein you use), and use Bomba rice. One of my household favorites is pork chop arroz and it uses the exact same method but I cut the pork chop in chunks, and I add the bone as well for flavor. It’s delicious.

Medium grain is acceptable, but long grain rice is simply out of the question. Paella should be made with Bomba or Calasparra rice, medium grain rices grown in Spain. Spanish rice is chubby and round, ideal for absorbing large amounts of liquid while still staying somewhat firm. You want your rice kernels stay separate and not creamy or mushy.Love this dish. When I talk to travelers visiting Spain for the first time, they always ask the same thing: "Where's the bestpaella in town?" A paella is a special shallow pan for making paella. If you don't have one, use your largest, flattest frying pan, such as a 10-inch cast iron skillet.

The rice is cooked uncovered –this is a distinct cooking technique for paella compared to other iconic rice dishes of the world like Jambalayaand Biryani. Initially, we cook the rice for just 10 minutes – at this stage, it will be partially cooked though it will seem to absorb most of the liquid. The good news is that you don’t need to be a gourmet living somewhere on the Spanish coast to cook a delicious paella — all you need is the correct ingredients.
