Description

Place the sweetened condensed milk, lemon juice and eggs into a clean and dry Thermomix bowl and mix on Speed 4, 45 seconds. Scrape down the sides and mix for a further 45 seconds or until creamy. Note: the mixture will be very runny at this stage. Super easy, and so delicious! It tastes like it took hours to make, yet it’s so easy and simple! Great recipe.

Pour the condensed milk mixture over the finely crushed biscuits. Stir to combine and add the roughly crushed biscuits as well. Grind the lemon slices in batches. Place a small amount of the dried lemon slices in the spice grinder (about 10). Use the guide on your grinder to confirm the maximum amount you can fill it. Cut down to remove the pith and seeds from each upright lemon quarter. Take each quarter one at a time and hold it upright along the skin side. Slice down through the pith (the stringy, more sponge-like section at the center of a whole lemon), which also contains the seeds. Discard the pith and seeds. [7] X Research source Slice the lemon widthwise into thirds instead of halves (option 2). Instead of cutting it in half at its fattest part in the middle, make 2 widthwise cuts to create 3 roughly equal sections of lemon. Use a fork to loosen the membranes, then squeeze out the juice. Or you can make the whole slice ahead and keep it in the fridge in an airtight container for several days.
