Playing off one of my favorite ingredients, I stumbled across a recipe using coconut and gin. It provided a bit of inspiration plus an avenue to make use of items that are hanging out in my kitchen after a week spent playing with recipes, all using coconut and coconut milk. Add ice cubes to a glass. Pour over gin and coconut water and top up with tonic water. Stir with a spoon and garnish with a lime wedge. Recommended Garnish Add the strained mixture, 3 sprigs of coriander and lime juice to a shaker and muddle. Add all the other ingredients and ice cubes. Shake and strain into a coupe glass. Garnish with a sprig of coriander. Recommended Garnish A refreshing twist on a classic gimlet which replaces simple syrup with honey and adds in coconut water. To make the coconut syrup, toast the coconut in a pan on a low heat until golden brown. Add the toasted coconut to a saucepan with sugar and water and bring to the boil, stirring until the sugar is dissolved. Remove from heat, cool and strain.Adding some exotic heat to a classic Gin Sour – gin, cardamom, coconut water, honey and citrus for a taste explosion.
