I’d like to make a smaller version in a 1lb loaf tin so would I be correct in assuming I would just halve the ingredients quantities?If you don't have any jam, you could use marmalade or honey - or even golden syrup (but not too much or the cake will be very sweet). For teaspoon (tsp) and tablespoon (tbsp) measurements, please use measuring spoons* and not the type of spoons you eat with. This time though I have split the batter - one half I added coco powder to and made a marble version of this. Also, make sure your salt and yeast don’t directly touch each other when first added to the mixing bowl as the salt can affect the yeast’s ability to leaven the dough.

I forgot to reserve a little bit of lemon juice for the icing so just used a little water instead and it was still beautifully lemony. Strong bread flour is recommended as it has a higher protein level to give the best rise to your loaf. Sorry I can’t be more helpful on this occasion, but I am really not quite sure what can have gone wrong.Cooking at the recommended 150c temp kept it lovely and soft (I’ll remember to try that for some other loaf cake recipes).
