Dried peppers are generally referred to as chilies (note the comment on spelling below), though that term is used in some circles and situations in reference to fresh peppers as well (Thai bird's eye chilies are a common example). Cayenne Pepper Powder: This intense chili powder is made from ground cayenne peppers and adds a considerable amount of heat to dishes. Traditional cooking uses: Ancho is a base of many traditional Mexican dishes. This chili is commonly used for sauces and soups and needs rehydration for about 20 minutes in boiling water before use. Either dress and stuff the rehydrated chili pepper for a main entree or place it in a food processor and create a chili paste that goes well with many Mexican dishes. Chilhuacle Amarillo As for your second comment, I would LOVE to do a second feature on the chiles (chilies, chillies, heh) from the Southwestern US. For that matter, I would love to do another feature on the fresh (not dried) chilies of Mexico, and a feature on Central and South American chilies. I’ve got some aji amarillo chilies just begging to be written about. The idea here was to familiarize my readers with dried Mexican chilies, and given my tendency to go VERY far in depth with my research, I didn’t want to put too much in one post. This recipe has a base of ancho chile peppers which register at about 1,000-2,000 Scoville heat units (SHU). In case you aren’t familiar, Scoville heat units are the most commonly accepted way to measure the heat of chile peppers. The Chimayo chili powder I included registers between 4,000 – 6,000 SHU.In a dry skillet over high heat, toast the dried ancho chile pods for a few seconds on each side until slightly fragrant and they start to puff up a little. Let them cool slightly, then remove the stem and shake out any seeds. The more seeds left in, the hotter the chili seasoning will be.
