These fruit bars caught my eye because of the name “That’s it”. I figure a name like that meant they had to have only a few ingredients and be pretty healthy. If you’d like to use frozen, follow the recipe as written and sub in frozen blueberries (do not thaw). Keep in mind that the filling will be much juicier. The lemon zest brightens up the blueberry flavor, and a touch of cinnamon adds a warmth that’s reminiscent of homemade pie, like apple pie. The manufacturers have processed fruit to make it stable at room temperature (not sure of for how long) and of course, now it is a concentrated source of calories from fructose (fruit sugar). Let's take the apple + strawberries bar for an example. In one bar (35 grams) there are 100 calories, 22 grams of carbohydrate, and 17 grams of sugar. This bar is Tiny! 35 grams is 1.32 ounces. Meager! In one whole apple (100 grams - 3.5 ounces) there are 52 calories, 14 grams of carbohydrate, 10 g of sugar. They should not be allowed to spin it to push consumers into thinking that this bar is the equivalent of eating an apple or berries.Preheat oven to 350°F (177°C). Line a 9-inch square baking pan (I love this one and this one) with parchment paper, leaving an overhang on the sides to easily lift the bars out of the pan. Set aside. All of the bars contain 80-110 calories, plenty of fiber to keep you satisfied, and as much as four grams of protein. I was a huge fan of the pear bar by itself, but I don't always do well with ginger.
