Mix in ½ teaspoon peppermint essence and taste to make sure the flavour of the peppermint comes through. I used Morrison's own brand American Peppermint Essence and ½ teaspoon was just about right. If you like a more minty taste, add a drop or two extra. Beat the cream until almost stiff (do not overdo this, otherwise you’ll land up with butter). Add the grated Peppermint Crisp, leaving enough for the top layer. In a large bowl, beat with an electric mixer on a medium speed for 30 seconds. Gradually add sugar, about 1/3 cup at a time, beating well after each addition and scraping the bowl occasionally. Beat 2 minutes longer. Once it is ready, remove the tin and peel off the baking paper. Transfer the ice cream cake to the serving platter ensuring that the biscuit base is at the bottom.
