Use as many colored vegetables as you can. This will make your curry look really beautiful and appealing Very good recipe! But.... if you make the paste yourself... there should be a note "wear googles and some protective gloves". xD Though we did not test other kinds of curry pastes (yellow, green, etc.), I have used them in the past and I am quite certain that the results would not be all that different. The top 3 might switch positions a bit (and it's worth noting that Mae Ploy yellow curry paste doesn't contain shrimp paste), but I highly doubt that the bottom 2 would be different. Thai curry pastes are basically a mix of ground fresh herbs and spices. The most common curry paste ingredients are: chiles, garlic, shallots, lemongrass, galangal, cilantro root (coriander root), kaffir lime zest, white peppercorns. Shrimp paste is always added to curry paste in Thailand, though many exported brands omit this to make it vegan and allergy friendly. Used just one tbsp of curry and that was more than spicy enough! Definitely taste after each tablespoon to make sure it’s at a good level for you.

There are a large variety of brands out there, and it’s impossible for me to taste test them all, so I had to narrow it down to a manageable number and here’s how I made the choice.

If you're sensitive to salt and can handle just a little spice, this is what I would use so that you have room to add more paste without fearing that it would become too salty or spicy. Zest about half of the lime directly into the pan. Maesri yields the closest result to homemade green curry paste. I find the other brands to be too sweet with less green curry flavour – and strangely, they are spicier! Pimping up curry in a jar I generally use Mae Ploy for my green curry. It is a bit salty, but I find that a little bit of palm sugar dissolved in a but of lime juice can help. Not a lot, but just a bit. Maybe a tsp of each. Lots of chopped thai basil and some coconut cream in with the coconut milk.

I have a soft spot for Panang, because as a kid that sweeter, coconutty broth made me drink it up like soup – it was the first non-Malaysian curry I ever had. flavor boosters - though most of the flavor comes from the green curry paste itself, I figured since we're including a lot of veggies plus unseasoned tofu, why not fortify those flavors with extra lemongrass, ginger, and garlic! If you don't have access to fresh lemongrass or lemongrass paste (often found in the produce coolers), simply leave it out. No big deal! The curry will still be very flavorful.I chose only brands that are commonly available outside of Thailand; so nothing obscure, local, or specific to Thailand, the US or Canada. If after adding garlic and shallots you find the mixture too watery and hard to pound, you can add some of the ground spices to help absorb some of the moisture. Namjai: A near-tie to Mae Ploy. It has a redder colour (if that matters to you) and a slightly milder shrimp paste flavor. tablespoons Thai green curry paste, like Thai Taste, Maesri, and Thai Kitchen, none of which have shrimp or fish paste
